台北遠東上海醉月樓 推重殼蟹料理

台北遠東飯店上海醉月樓即日起至9月22日，以重殼蟹為主題，推出多款料理。主廚戴忠麟指出，市面少見的「重殼蟹」原是未交配的雌性處女蟳，換殼之際，已長有另一層被膏黃和蟹肉脹滿的全新薄殼。由於處女蟳換殼並無特定時節，重殼蟹全靠野生捕捉。平均千斤重的處女蟳，只能挑出約十斤重的「重殼蟹」，奇貨可居。

重殼蟹的行家吃法為清蒸，黃橙油亮的飽滿蟹黃，鮮潤軟黏。另外也推出蒜香軟殼蟹、醬爆處女蟳等菜色，單點480元起。
