已故毒物科醫生林杰樑遺孀譚敦慈，在臉書上分享以醬油加水煮沸後加檸檬汁或醋，就能去除化學醬油中有毒物質單氯丙二醇。

譚敦慈在林杰樑臉書上表示，最近油品及醬油等食安問題沸沸揚揚，很多網友詢問如何少油及半煮炒方法，因此提供如何去除化學醬油中的單氯丙二醇及分享林氏食譜。

她說，去除化學醬油中的單氯丙二醇方法是醬油加水（1：1）煮沸，煮沸後加少許檸檬汁或醋。

另外，譚敦慈分享半煮炒青菜、麻油雞食譜、少油煎魚法，教民眾如何健康飲食。

半煮炒青菜建議選擇冒煙點低的油，如橄欖油、菜仔油、葵花油，料理步驟分別是油1/2匙加入鍋子，將蒜放在鍋子中間，放入青菜，倒入1或1/2碗水，此時才開火，煮至沸騰加鹽，撈起青菜，湯汁不要。

譚敦慈說，湯汁不要可去除農藥、硝酸鹽。

林氏麻油雞食譜是先在冷鍋放入一湯匙苦茶油或葡萄籽油（冒煙點高的油），加入薑片略炒，再加入雞肉及麻油炒香，最後加水、加米酒煮熟。

林氏低溫少油煎魚法是先放一湯匙油（建議選用冒煙點高的油，如葡萄籽油），放入蔥薑蒜，將魚放在蔥薑蒜上，加水半碗，此時才開火，煮至水收乾即可。

確保飲食安全，譚敦慈建議自行烹調三餐；多吃當季盛產蔬果，儘量不要吃加工再製品；多吃深綠色蔬菜、豆類、五穀雜糧等含高纖維素食物有助於排除脂溶性毒素。

每天至少吃3碗蔬菜攝取足夠蔬菜量。大腸癌、乳癌、前列腺癌、脂肪肝、糖尿病及心臟血管疾病的病患儘量不要選擇氫化植物油及飽和脂肪酸高的油品。油加熱到冒煙就會產生化學變化，不當烹調，好油也會容易變壞油。
